I have seen many recipes for Vegan Rice Krispie Treats, but most don’t include marshmallows! Which is fine, but I wanted to make a recipe for truly ooey…gooey…marshmallowy treats.

They are just a little different than regular homemade Rice Krispie Treats, because vegan marshmallows work slightly differently. But they actually turn out BETTER, because the vegan marshmallows create chunks of gooey goodness that is completely irresistible!

I used Trader Joe’s vegan marshmallows, but Dandies work well too. I hope you love these treats as much as my family does! They are:

Vegan Rice Krispie Treats (Extra Ooey-Gooey!)

A childhood favorite, these are the BEST Vegan Rice Krispie Treats, extra ooey-gooey and marshmallowy! Easy to make, too!

Cook: 5 minutes
Resting time: 1 hour
Total: 1 hour 10 minutes
Servings: 20 servings

Ingredients 
 

Instructions 

  • Line a 9 x 13 inch baking pan with parchment paper and lightly spray with oil. Set aside.
  • In a large pot, melt the vegan butter. Now add the vegan marshmallows and stir, until the marshmallows are melted. They won't melt as well as regular marshmallows, but they should still melt and turn into sort of a big blob.
  • Remove the pan from heat and stir in the vanilla. Now fold in the cereal using a large spoon or spatula. There will be chunks of marshmallows and that's okay, just try to coat all the cereal.
  • Transfer to the prepared pan and press down evenly either with your hands or a spatula. You can lightly grease the spatula if it sticks.
  • Allow the treats to cool for 1 hour. Remove from the pan, using the parchment paper, then cut into squares and serve. Enjoy!

Notes

  1. Keep leftover treats in a covered container for up to 3 days. They do not freeze well.
  2. I used Trader Joe's brand of marshmallows, but Dandies brand works as well.
  3. Kellog's Rice Krispies are technically not vegan due to Vitamin D3 (which is made from animals), but Nature's Path work quite well and are gluten free!

  2. I made these rice crispy treats. I used Miyoko salted vegan butter. These came out amazing! It was sweet but not too sweet. It had a good crunch but was not gooey. These sliced well. My (non vegan) family seriously loved it too!

  3. Hi nora, I want to make vegan peanut butter rice krispy with yours rice crispy treat. Sp how much peanut butter do I add in this?

    1. I’ve never tried it, so I’m not sure. You might be able to add around 3/4 cup creamy peanut butter. Sounds good, I hope you enjoy them!

  5. Hi! I’m super excited to make this!! Would the vegan mini maple from traders work in this recipe? I just wasn’t sure about the flavor?

    1. I haven’t tried it, but those maple flavored marshmallows are yummy! I think it will work, the treats will just be maple flavored.

  6. I added vegan food coloring (orange) to the marshmallows and vegan Sweetapolita sprinkles for some extra Halloween fun! A great treat that is also easy to transport!

  7. I am making these for a very specific event (bodybuilding show) to have before i step on stage however i have to keep them as simple as poss for digestive reasons. Can i make these without the butter and vanilla extract?

    1. Unfortunately I don’t think they will come together without the vegan butter. I suppose you could try it, but I don’t think it will work that well. The vanilla is fine to leave out if needed.

    2. The butter helps the marshmallows melt and not stick to your pan. Here it uses vegan butter. I saw a recipe that uses almond butter and maple syrup instead of marshmallows.

  8. I make this all in one oblong slow cooker pan. Miyokos butter + dandies mini vanilla marshmallows + Nature’s Path chocolate Koala Crisp. Simply divine!

    1. 2 10 oz bags is for the single recipe. It doesn’t seem to be working properly when you double it. I’ll try to fix that!

  12. So good! I used Trader Joe’s marshmallows. Melted Miyoko’s butter then added marshmallows and melted over medium heat while stirring with spatula. Melted perfectly! Added sprinkles in with the puffed rice cereal and couldn’t stop eating them once cooled! Will definitely make these again.

    1. Just an fyi, when you double and triple the recipe the marshmallow amounts don’t change. It ended up
      Being okay for doubling, but I think It could’ve used another half-to one more bag of mallows.

    1. I’m so happy you love them, Chloe! You should be able to stir in 1/2-3/4 cup of creamy peanut butter here but you may want to omit the vanilla and use less butter (maybe around 1/4 cup). I hope this helps!

  18. I used the brand Mallows – they melt so good. And they’re soy free. For the cereal I used Crispy Rice brand. They turned out perfectly.
    I didn’t add vanilla cause my mallows were vanilla flavored . 
    But loved this step by step guide! Thanks for this recipe 

  19. Delicious – read all the comments. Followed the advice, cut the marshmallows smaller, melted the Miyoko’s butter and then added the cut mallows. kept the temp low and stirred often. Wait and BE patient , then add the rice cereal.

    You WILL be rewarded!!!

  20. Thanks for all your recipes ; ) I am
    not vegan, but my son is and I want him to enjoy family events.  I cut the marshmallows with kitchen shears and they mostly melted, and the butter browned.. I used a large cast iron enamel pot. I use my homemade vanilla … a lot ; ) and they were well received.
