Vegan soup 101

Did you know that you don’t need chicken or beef broth, meat, or dairy to make a great pot of soup? It’s true!

All you need for an unforgettable soup or stew is (1) aromatics, like onion, garlic, carrots, and/or celery for a delicious baseline of flavor; (2) store-bought or homemade broth; and (3) simple ingredients, like vegetables, grains, and/or protein to round it all out. By following this formula, you can make a 100% plant-based soup or stew that’s just as mouthwatering and crave-worthy as a non-vegan recipe.

Speaking of transforming traditionally non-vegan soups and stews into a just as tasty plant-based version, my Easy Vegan Ramen comes with an incredible depth of flavor and limitless topping ideas! And my Mushroom Bourguignon? You’d never guess it wasn’t made with meat or didn’t come straight from France.

Do vegan soups freeze well?

Many vegan soup recipes freeze very well for months at a time, leaving you with a quick and easy lunch or dinner to reheat in a flash. Make sure you follow these tips and tricks before you freeze your soup:

  • Wait for the cooked soup to cool to room temperature before transferring it to a freezer-safe airtight container.
  • Leave one inch of space at the top of the container for expansion. The last thing you want is spilled soup in your freezer!
  • Thaw the frozen soup overnight in the fridge, then reheat in a pot on the stove or in the microwave the next day. Don’t forget the crusty bread or crackers for dunking!
